What could be better for dear old dad on Father’s Day than a nice, juicy steak? Not much, except a juicy steak drizzled with a zesty sauce.

Skirt steak is reasonably priced. And, depending on the size, you can feed up to four people on one steak! Adding the sauce just brings another level of fabulous flavor.

For Chimichurri Topped Skirt Steak you will need…SkirtSteak_Chimichurri
Skirt steak
olive oil
lime juice
salt and pepper
4 garlic cloves
1 bunch fresh parsley leaves, stemmed
1 bunch fresh cilantro leaves, stemmed
1 jalapeno, seeded
1 c. olive oil
1/2 c. red wine vinegar
2 tbsp. onion flakes
2 tbsp. lime juice
1 tsp. dried oregano
1/4 tsp. salt
1/4 tsp. pepper

This steak pairs great with many side dishes. Like grilled street corn, warm rice salad or a pan-fried potato medley.

Start by rubbing the steak with oil, lime juice, salt and pepper on both sides. Then, get it on a hot grill over medium heat. It is a thin cut of meat, so it will cook fairly fast—about five minutes on each side.

Once your steak is done, remove it from the grill. Let it to rest for 10 minutes while you are working on the sauce.

For the sauce, combine all of the measured ingredients in a food processor or blender. Blend until everything is broken down and you have a thick sauce. Pour the chimichurri over the meat before servings.

  1. Rub the steak down with oil, lime juice, salt and pepper on both sides.
  2. Grill over medium heat for about five minutes on each side.
  3. Allow steak to rest for 10 minutes while preparing the sauce.
